Southern Style No Bake Oatmeal Cookies

These southern style oatmeal no bake cookies use rolled oats, stirred into a cooked brown sugar and butter syrup that's flavored with peanut butter. The cookies are placed onto waxed paper and set up as they cool. Cooling time should range between one to two hours.

Ingredients
3 1/2 cups packed brown sugar
1/2 cup water
1/4 cup butter (1/2 stick)
1/2 tsp. salt
1/2 cup peanut butter
1 tsp. vanilla
3 cups quick-cooking rolled oats (oatmeal)

Directions
Combine brown sugar, water, butter and salt in saucepan. Bring to a boil; cook and stir for one minute. Remove from heat. Stir in peanut butter and vanilla, then oatmeal. Cool slightly. Drop by spoonfuls onto wax paper on a heat-resistant surface.

Oatmeal Drop Cookies

Both Oatmeal No Bake Cookies and drop cookies are very similar in that no baking is needed for either cookie recipe. Below is a classic recipe for oatmeal drop cookies that require no baking or cooking. This recipe was submitted by Michelle Clark of Walker, LA and is featured on WISH-TV in Indianapolis, IN.

Ingredients
2 c sugar
3 tbsp cocoa
1/2 c milk
1 c peanut butter
3 c oatmeal(1 Minute quick oats)
1 tsp vanilla

Directions
1. Mix sugar, cocoa, and milk over medium heat.

2. Dissolve sugar conpletely and bring to a boil for 1 minute. Remove from heat and add peanut butter and vanilla. Stir in oatmeal.

3. Drop onto wax paper by tablespoon and let harden.

This no bake cookie recipe will yield about 18 to 36 cookies (depending on size). Total prep time should be 15 to 20 minutes. This is a very simple recipe that the kids will love.

Grandma's No-Bake Oatmeal Dandies

A more traditional oatmeal no bake cookies recipe is Grandma's No Bake Oatmeal Dandies. Its not quite a cookie, but your sweet tooth will love it. This recipe features raisins, marshmellows & peanut butter for a taste sensation. There easy to make and require very little time to create.

Ingredients
3 cups miniature marshmallows
1/2 cup chunky peanut butter
1/4 cup honey
3 tablespoons butter
1-1/2 cups uncooked oatmeal
1 cup raisins

Directions
Line a 9-inch square pan with foil; grease. In heavy saucepan over low heat, cook marshmallows, peanut butter, honey and butter, stirring occasionally, until smooth. Remove from heat; stir in oats and raisins. Spread evenly in prepared pan; chill until firm. Remove from pan by lifting foil. Remove foil and cut into squares.

This recipe should yield about 36 No Bake Oatmeal Dandies. Cooling time should be about an hour, so plan ahead if you want to serve this as a dessert. Its also great as a weekend afternoon activity with your kids or grandchildren.

No Bake Oatmeal Chocolate Nut Cookies

Donna Weihofen is a regular contributor to WISC-TV in Madison, WI. Recently, one of Donna's oatmeal no bake cookies recipe was featured as a TV segment. Donna's No Bake Oatmeal Chocolate Nut Cookies were a big hit with the local Madison, WI TV audience. Below is her recipe.

Ingredients
1/2 cup butter or margarine
1/2 cup sugar
1/2 cup fat-free milk
1/2 cup cocoa
1/4 cup chocolate chips
1 cup Splenda
1/3 cup peanut butter
2 teaspoons vanilla
1 cup chopped walnuts
3 cups oats, rolled (raw), divided

Directions
Place parchment paper on 2 cookie sheets. In a small saucepan, combine butter, sugar, milk, and cocoa. Bring to a rolling boil. Continue to boil for 1 minute while stirring constantly. Remove from heat. Add chocolate chips, Splenda, peanut butter, and vanilla. Stir until smooth. Pour chocolate mixture into a large bowl. Add walnuts and 2-1/2 cups of oats. Stir to mix well. Add additional 1/2 cup oats if mixture is too sticky. Drop small teaspoon sized balls of the dough on cookie sheet. Chill until firm.

No Bake Apple-oatmeal Cookies

Ingredients
1/2 c 1 stick butter or margarine
2 c Granulated sugar
3 tb Cocoa
1 ds Salt
1 c Grated tart apples
1 ts Vanilla
3 c Quick-cooking oatmeal
Powdered sugar

Directions
In a medium saucepan, melt butter and add sugar, cocoa, salt, and apples. Bring to a rolling boil and boil 1 1/2 to 2 minutes. Remove from heat and add vanilla and oatmeal. Stir well. Drop by teaspoons onto waxed paper. If desired, flatten with fork. When cool, roll in powdered sugar. May be frozen or refrigerated. Makes about 4 1/2 dozen cookies.

Oatmeal Almond No Bake Cookies

For those who like the flavor of almonds, this oatmeal no bake cookies recipe is just for you. In as little as ten minutes, you can prepare a special mixture of oatmeal & alomnd cookies.

Ingredients
2 1/2 cups of oatmeal
100g roasted almonds (finely chopped) or almond flakes
100g milled almonds (or almond powder)
1/2 cup of softened butter
1 table spoon of honey
vanilla essence

Directions
1. Mix butter, milled almonds, honey and a couple drops of vanilla essence together until smooth.

2. Mix oatmeal and roasted almonds together and pour into the butter mixture. Mix thoroughly.

3. Spoon mounds onto waxed paper and refrigerate at least 30 minutes or about 10 minutes in the freezer before serving. (Store in air-tight container in the fridge).

No-bake Caramel Oatmeal Cookies

3/4 cup margarine
1 can evaporated milk, 6-ounce can
